Spaghetti Bolognese
Spaghetti Bolognese Recipe

Ingredients:
2 tbsp olive oil
1 onion
4 garlic cloves, chopped
1 celery, chopped
2 oz. or 1/3 cup diced bacon or pancetta
1 lb ground beef lean as possible 90% or higher
1 140z can diced tomatoes
2 tbsp oregano and thyme
1/2 cup of red wine
1/2 cup of beef stock
2 tbsp tomato puree
1 lb of spaghetti
salt and pepper to taste
Instructions:
First lightly cook the bacon and drain of any grease. Next heat oil in pan and add onions and cook for about 3 minutes. Add garlic, celery and bacon or pancetta and saute for 3-4 minutes. Add the meat and cook for another 3 minutes or until meat is no longer pink. Stir in the oregano, thyme and red wine and cook for 2 minutes or until reduced by half. Add the tomatoes and beef stock and bring to a boil. Reduce the heat and simmer for 45 minutes. Stir in the tomato puree and season with salt and pepper to taste. Meanwhile cook the spaghetti in a separate pot of boiling water. When spaghetti is finished transfer to a plate and pour over the bolognese and your done
