Sweet and Sour Pork

Ingredients:

1lb pork tenderloin

2tbsp extra virgin olive oil

1 lrg zucchini 1 red onion 1 red bell pepper roughly chopped

3 cloves garlic smashed

2 carrots chopped

1/2 pd button mushrooms halved

2/3 cup pineapple juice

1 tbsp flour

2 tbsp soy sauce

3 tbsp ketchup

1 1/2 tbsp white wine vinegar

1 tbsp honey

Instructions:

  First cut up the pork tenderloin into thin squares.  Heat oil in large pan or wok add pork and stir-fry for about 10 mins or until pork is cooked.  Add the chopped onion garlic carrots zucchini, pepper, and mushrooms to wok and stir-fry for 5 more minutes.  Meanwhile mix together the pineapple juice flour soy sauce ketchup wine vinegar and honey.  Poor mixture onto the pork and veggies cook on high stirring often until juices get thick.  When juice is thick enough for you your done.

Roasted Pork Tenderloin W/ Pan Roasted Bell Peppers

 

Serves 4 with mashed potatoes

1-2lb pork tenderloin                  1 red onion diced

fresh thyme springs                     2 plum tomatoes diced

fresh rosemary springs             2tble crushed red peppers flakes

2 lemons                                  2 tble butter

extra virgin olive oil                    4 garlic cloves finely chopped

1 red bell pepper diced                      salt and pepper

1 green bell pepper  diced             2 tble butter    

  First set your oven to 400*f  meanwhile coat the pork with olive oil salt and pepper.  Cut a slit in the side of the pork to open it up butterfly like.  Coat the inside with olive oil salt pepper juice of 1 lemon 2 garlic cloves finely chopped and a few springs of thyme and rosemary.  Close the pork back up and tie together with string if u like.  Place in the Oven and cook for 25-35 minutes the pork should be cook to 170* on the meat thermometer.  While that is cooking heat 2 tble of extra virgin olive oil in frying pan dice the onions and the rest of the garlic add to pan cook 2-3 minutes.  Next add the diced peppers and butter cook for 3 more minutes.  Finally add the diced tomatoes and the juice of 1 lemon and crushed red pepper flakes and cook until peppers are soft let sit on low heat until all the flavors come together about 5 more minutes.  Take pork out of the oven let sit for a good 5 minutes then serve.  Serve with mashed potatoes

Red Roasted Pork with Noodles

 

Serves 2

Ingredients:

1lb pork tenderloin

3 tbsp of extra virgin olive oil 1 for cooking 2 for marinade

2tbsp soy sauce

1/2 lemon zest

1 tbsp red curry paste4 garlic cloves finely chopped

1 red onion chopped

 1 red 1 orange pepper chopped

small bunch of chives

2 tbsp fresh cilantro

1/2 pound thick noodles or egg noodles

 

Instructions:

 In a large bowl mix lemon zest soy sauce 1 tbsp extra virgin olive oil and curry paste and cover pork with mixture and let marinate 20 minutes to 1 hr. Preheat the oven to 400*f and roast pork in oven for 20-25 minutes or until pork read 170 on meat thermometer. Cook noodle in boiling until tender (egg noddles about 3-4 min).  Meanwhile heat 1 tbsp olive oil in add red onion and garlic cook for about 2 minutes .  Next add the Red and Orange pepper cook for 3-4 minutes. Stir in the chives and cilantro  add noodles to the pan stir and cook for 1 minute more transfer over to plate put pork on top and your done. 

 

Pork Vegetable Stir-Fry

Serves 4

1 cup button mushrooms

1lb pork steaks/ boneless chops

2 cloves finely chopped garlic

1 Spanish onion chopped

1 green 1 red 1 yellow pepper chopped

Noodles any kind 1/3 of box/bag

2 tbsp soy sauce and butter

1 tble cilantro

Put mushrooms in large bowl of boiling water cover and let sit for 20 minutes.  Next trim pork of any fat and cut into 1x1 squares  Bring a pot of water to boil add the pork to the water and cook for 5 minutes.  Remove the pork from water with a slotted spoon but keep the boiling water for your noodles.  Heat 2 tbsp oil in a large wok.  Add pork to wok and stir-fry for about 5 minutes.  Meanwhile add noodles to boiling water.  Remove mushrooms from bowl of water and let drain.  Roughly cut the mushrooms and add with the onion and peppers to wok and stir-fry for 6 minutes.  stir in the cilantro, butter and soy sauce and cook for 2-3 minutes.  Stir in the Cook noodles and serve.
