CAPRI SALAD
Another Great snack fast and easy Serves 2
2 Large Tomatoes
4 1/2 oz. Mozzarella
1 tbsp balsamic vinegar
1 tbsp extra virgin olive oil
black olives ( also optional)
sea salt / peppa
Cut Tomatoes and mozzarella into slices. Sliced olives into rings. Next layer the tomato, mozzarella and olives in a stack about three high, finishing with a layer of cheese on top. Place each stack on grill for 2-3 min or broiler/ oven just enough to melt the cheese. Finally drizzle over the vinegar and olive oil season with sea salt and peppa. 
TOMATO'S STUFFED WITH TUNA MAYONNAISE
Great snack serves 2
4 PLUM TOMATOES 4 OZ. CAN TUNA
2 TBSP TOMATO PASTE 2TBSP CAPERS, RINSED
2 EGG YOLKS
2 TSP LEMON JUICE + ZEST OF 1 LEMON
4 TBSP EXTRA VIRGIN OLIVE OIL
Cut the tomatoes in half scoop out the seeds. Divide the sun-dried tomato paste among the tomato halves and spread around the inside of the skin. Roast in a oven at 400*f for 15-20 min. Take out and let cool. Meanwhile, make the mayonnaise. Whisk together the egg yolks lemon juice and zest. keep whisking & slowly add the olive oil till the mayo has thicken. Next add the tuna & capers to the mayo and season with salt and peppa. Finally spoon the tuna mayo into the tomato shells and return to oven for a few minutes or serve cold.
