RECIPE OF THE WEEK
SHRIMP SCAMPI RECIPE
Ingredients:
Extra virgin olive oil
1 teaspoon crushed red pepper flakes
4 garlic cloves, chopped
1 cup dry whit wine
2 pounds shrimp (large) pealed & deveined
3 tbsp butter
1 lemon plus zest
1 tbsp oregano
1/2 cup fresh basil
1 onion diced
1 pound cooked linguini
salt & pepper
Instructions:
1. Saute shrimp until they just start to turn pink, but don't cook through. remove and set aside
2. Heat 2 tbsp oil in pan add onion garlic, crushed red peeper and cook about 3 minutes.
3. Add herbs, wine, stock and bring to a boil. Simmer and reduce by half about 5 minutes.
4 Stir in shrimp and butter and heat until shrimp is completely cooked. Transfer cooked noodles over to pan and serve
